Everyone knows that I love Fashion, however, Food is actually my first love (after God and my husband of course). My husband and I love to cook, and we often share things that we cook and eat on social media. We are both very health conscious, and recently, we’ve made the decision to make some dietary changes and eat less meat in effort to live healthier lives. Like us, many people have become more interested in exploring Meatless Mondays, Vegan or Vegetarian food options. Especially after people have watched “What The Health“.
Cooking without meat does require some creativity, so anytime I find a meatless recipe that I like, I share it on my Instagram Instastories. Throughout the process of exploring meatless meals, I’ve been pleasantly surprised that I’ve still been able to eat many of my favorite meals. I’ve been able to find a alternatives for most of my favorite meals by integrating veggies or meat substitutes. I’ve decided to start sharing recipes on my blog because I’ve received so may recipe request from my Instastories.

Ingredients

Meatless Spaghetti with Zoodles
1 Jar of Marinara
1 Pack of Beyond Meat Meatless Meat Crumbles
2 Teaspoons of extra virgin olive oil
1 Medium onion
8 oz Portobello Mushrooms
3 Garlic Cloves
1/4 Cup Chopped Fresh Basil
1 Large or 2 Medium sized Zucchini
1 Red Bell Pepper
1 Green Bell Pepper
Step 1: Select your favorite veggies and chop them coarsely. I used bell peppers, onions, garlic and basil in this recipe. Other veggies that you could consider adding into this recipe are eggplant, diced tomatoes, sun-dried tomatoes, or squash. I grabbed these veggies from my local farmers market and they were delicious.
Step 2: Use a spiralizer machine or hand held spiralizer to make Zucchini noodles or what most people refer to as “Zoodles”. I used one large zucchini, but you can feel free to use 2 smaller Zucchini’s to spiralize into a noodle shape. If you don’t want to use veggies as noodles, you can always keep the recipe classic and use spaghetti noodles.
Step 3: Sautee Zoodles with 1/2 of your chopped garlic, olive oil, salt and pepper. Sautee Zoodles for about 5 minutes or until fully cooked and softened.
Step 4: Sautee veggies by tossing in remaining garlic, mushrooms, bell peppers, and onions into olive oil. Cook for about 5 minutes until veggies are softened.
Step 5: Add in meat substitute to veggies. Follow package instructions and cook for 3 minutes until product is completely cooked.
Step 6: Add in your favorite tomato sauce. I used Bertolli marinara for this recipe.
Step 7: Add in fresh chopped Basil once sauce has simmered. Season sauce to taste. Feel free to add in italian seasoning, pepper, salt, garlic powder and a ping of sugar if you prefer a sweeter sauce.
Step 8: Place Zoodles on serving plate.
Step 9: Top Zoodles with Meatless Marinara sauce and Enjoy!
