Are you ready to cook an amazing scallop dish that will have you feeling like a top chef? I’m telling you, once you’ve made your own chutney, there is no stopping you in the kitchen! When I finished cooking this dish, I felt like a culinary school graduate. The dish seems very advanced, but it is extremely easy to execute. The prep and cooking can all be knocked out within an hour, and I’ll walk you through each step.
As you know, I love to cook and share recipes, but I can’t fully take credit for this one. This scallop recipe was created by one of Charlotte’s finest, Chef Greg Williams. Greg is one of the leading chefs behind Soul Food Sessions, a series of nonprofit pop-up dinners founded in Charlotte to increase diversity throughout the food industry. Through a partnership with Coca-Cola Consolidated, this initiative enhances opportunities for African American chefs by hosting dining experiences that feature diverse culinary talents and open the conversation about equal opportunity in the food industry. The Table is Set: A Four-City Tour Served With A Coke, kicks off in the Queen City on June 19th with a seven-course dinner. I love initiatives that support the black community and I love good food, so with this post, it’s a win win. I’ll be in attendance at the Charlotte kick off event on June 19th, and I hope to see you there!
Now Let’s Get Cooking! This post features Seared Scallops with Purple Carrot Chutney. This amazing recipe is one of the featured recipes for the food tour. When I first saw this recipe, I initially thought, where in the world do I find purple carrots? You’re in luck because Whole Foods carries organic purple carrots in their inventory.
Pro Tip: Ever heard of beverage pairings? Well for this recipe, I’m suggesting Coca-Cola® Zero Sugar, which brings to the forefront the richness of scallops combined with the boastful flavors of ginger and garlic in chutney.
